Four ways with Jersey Royals

The Jersey Royal potatoes in your box herald the new potato season. Brilliant Phil Le Maistre grows ours on Manor Farm in (you guessed it) Jersey. Jersey Royals have a Protected Designation of Origin status, mais bien sur.

As they’re young little things, Jersey Royals have delicate skins which just need a scrub, not a peel. Keep them in a cool, dark place (like the fridge) in their paper bag. Jersey Royals are best cooked simply, as they have an almost nutty flavour. Serve simply with butter, or try the ideas below for something a bit different.

 
Pestotatoes  
Boil till tender. Toss in fresh pesto. Add a little freshly chopped mint for a lift.

  T is for tzatziki  
Mix cold boiled Jerseys with Greek yogurt, cucumber, lemon, garlic and mint (or a tub of mint tzatziki) for instant potato salad.

  Hungry as a horse  
Mix some horseradish sauce, crème fraîche and freshly chopped parsley. Stir through a bowl of cold, boiled potatoes.

  Patatas chorizo tortilla  
Mix boiled Jerseys, slivers of chorizo, finely chopped onion and parsley. Mix with whisked eggs. Pour into an oiled pan and grill till golden and set.
