Rich and tender, wild venison haunch makes a luxurious roast. We like to give it the Hugh Fearnley-Whittingstall treatment:
Season the meat and top with a few sprigs of rosemary and thyme and bay. Wrap in pancetta and slowly roast. Then, serve with a red wine and redcurrant enriched sauce and a heap of buttery mash.
