This sustainably caught Whole Salmon from Loch Duart in northern Scotland is particularly delicious roasted in a foil parcel. Make a few slashes across each side of the fish to help speed up cooking and absorb flavours. Tuck some herbs or spice into the cavity. Add a little wine, or slather it with a flavoured butter.
Prop the foil parcel on a baking sheet and roast in a 220°C/Gas 7 oven for 45 mins to 1hr, checking often. It's done when the flesh easily flakes from the bone.

The first ever recipient of the Freedom Food standard for salmon, Loch Duart work hard to ensure the environment is as close as possible to what salmon experience in the wild, allowing plenty of space for the fish to swim in. The water is naturally kept clean by the tide, and by using holistic methods to help the salmon flourish. For example, they use native sea urchins to help keep the sides of the pens clean.
They take great pride in their efforts to preserve the fishing environment for future generations, as well as in the welfare and taste of their fish. By ensuring the fish have plenty of space, they’re able to exercise and grow naturally, which helps give the fish their excellent flavour.
