What makes me special?
- Crackling-crisp skin. Prick the skin all over and roast the bird on a rack so the fat can render away.
- Dark, juicy meat. Every part of the bird is dark meat with a rich, rounded flavour.
- Gravy from the giblets. Simmer the giblets with an onion and a bay leaf while the duck roasts. Strain the stock into the tin juices for a glossy gravy.
- Save the fat. Pour off the fat as it collects and keep it in the fridge for the crispest roast potatoes.
- Rest before carving. Let it rest, loosely covered, for 15-20 minutes so the juices settle back into the meat.

Sladesdown Farm is a family farm in Devon, run by Daniel and Elaine Mason, who both grew up in farming families. They started out rearing turkeys and geese for Christmas, and the farm has grown from there. Today their free-range birds graze pastures of wild grasses and vetches, are fed a natural, non-GM diet, and are reared, prepared and packed right there on the farm.
