Whip up something silky with our free-range Duck Livers from Sladesdown Farm. Blend them into a smooth, buttery pâté, or pan-fry them in minutes and pile them onto hot toast.
What makes me special?
- Mellow and velvety. They have a rich, rounded flavour that loves sharp, fruity partners like caramelised onions or apple.
- Pâté the easy way. Fry them with shallots and thyme, then blend with butter until silky. Seal with melted butter and chill until set.
- Keep it quick. A few minutes on each side, until they're cooked all the way through.
- Deglaze the pan. A splash of brandy, sherry or Marsala lifts the sticky bits, then swirl in a knob of butter.
- Trim and pat dry. Snip away any sinew and pat them dry so they brown evenly.
- For festive boards. Make the duck liver pâté the day before and serve it with crackers and cornichons.

Sladesdown Farm is a family farm in Devon, run by Daniel and Elaine Mason, who both grew up in farming families. They started out rearing turkeys and geese for Christmas, and the farm has grown from there. Today their free-range birds graze pastures of wild grasses and vetches, are fed a natural, non-GM diet, and are reared, prepared and packed right there on the farm.
