Cook up a special dinner for two with our free-range Duck Breasts from Sladesdown Farm. Seared skin-side down until crisp, they slice up rosy, tender and full of rich flavour.
What makes me special?
- Deeply savoury. Darker and more savoury than chicken, with a buttery layer of fat under the skin.
- Start in a cold pan. Score the skin and lay the breasts skin-side down in a cold pan. As it heats, the fat melts away and the skin turns golden.
- Rest, then slice. Rest them for a few minutes, then slice on the diagonal.
- A quick pan sauce. Add a splash of port and a handful of cherries or blackberries to the hot pan once the duck is out.
- Over a winter salad. Slice it warm over bitter leaves, orange segments and toasted hazelnuts.
- Takes bold spices. A rub of five-spice and salt on the skin works beautifully.

Sladesdown Farm is a family farm in Devon, run by Daniel and Elaine Mason, who both grew up in farming families. They started out rearing turkeys and geese for Christmas, and the farm has grown from there. Today their free-range birds graze pastures of wild grasses and vetches, are fed a natural, non-GM diet, and are reared, prepared and packed right there on the farm.
