After being elected mayor in 1995, Michael Latz, owner of Château Aspras, encouraged the whole village to go organic. Ever since, the area has garnered a strong reputation for organic farming, with Château Aspras at its centre. Now headed up by his son, Sebastien Latz, the vineyard produces three cuvée.
