Peach, Prosciutto & Basil Croissant

These soft, flaky all-butter croissants are filled with a summery mix of tangy crème fraîche, savoury slices of ham, sweet slivers of fresh peach and fragrant basil leaves. Ideally eaten on a sun-drenched balcony in France, and easy to imagine yourself on one after your first bite.


  • 2 croissants
  • 1 peach
  • 2 tbsp crème fraîche
  • 4 slices of prosciutto crudo
  • A small handful of basil leaves
  • Freshly ground pepper, to taste

1. Preheat your oven to 180°C/Fan 160°C/Gas 4. Place the croissants on a baking tray. Slide them into the oven for 5 mins to warm through.
2. While the croissants are warming, cut the peach in half and scoop out the stone. Thinly slice the peach.
3. Remove the croissants from the oven and cut them in half, not quite all the way through. Add a generous dollop of crème fraîche. Add a couple of slices of ham and 4-6 peach slices. Tear in a few basil leaves and crack over some black pepper. Serve straight away.
