1. Smoked Salmon with Lemon Thyme Butter
Mix a pack of softened butter with fresh thyme leaves, lemon zest and a squeeze of juice, salt and pepper. Cut little cubes of soda bread. Slather with butter. Top with smoked salmon. Garnish with a little thyme sprig.
2. Griddled Aubergines with Spiced Houmous
Thinly slice an aubergine or two. Get a large griddle or frying pan smoking hot. Add the slices in a single layer. No oil needed. Season with salt and pepper. Char each side a little.
Remove. Mix 1 tsp toasted cumin seeds, the zest of a clementine and a squeeze of juice, finely chopped leaves of 1 rosemary sprig and a pinch of chilli powder into a pot of houmous. Toast slices of your fave bread. Cut into bitesized triangles. Gloss with a little oil. Dollop with houmous. Cap with the aubergines.
3. Blue Cheese & Walnut Pâté with Cranberry
In a food processor or blender, whizz 100g crumbled Stilton with 100ml luxury pouring or double cream, add a handful of toasted, chopped walnuts and 4 finely chopped sage leaves (optional but lovely). Once fairly smooth, dollop onto oat cakes. Cap with a little spoon of wild cranberry sauce and a walnut half.
