Carrot, Nectarine & Sweet Potato Slaw with Tahini Dressing

1. Coarsely grate your carrots (reserving the tops), sweet potato and nectarines. Peel and grate 1 tbsp ginger. Add it to the salad with a pinch of salt and pepper and a drizzle of oil
2. Finely chop half the carrot tops. Make a pesto with the rest or add to a veg stock to turn it golden.
3. Whisk the tahini with 3tbsp cold water. Add a pinch of salt and chilli powder. Trickle in more water, if needed, till single cream-consistency.
4. Drizzle it over the salad. Lightly toast your sesame seeds. Fold half the seeds through with the chopped carrot tops. Finish with the remaining toasted seeds and a handful of chopped coriander.
