Carrot, Cardamom & Apricot Smoothie

The amber hue of the cardamom spiced carrots, clementines and apricots isn’t the only healthy glow you’ll get from a glass of this smoothie – it’s packed with carotenoids, vitamins and minerals to keep you feeling fab.

Ingredients

  • 400g carrots
  • 330ml almond milk
  • 5 cardamom pods
  • 50g dried apricots
  • 1 clementine
  • A cupful of ice

Method

1. Coarsley grate the carrots. Crush the cardamom pods in a pestle and mortar. Remove the papery husks, leaving the seeds in the mortar. Crush the seeds finely. Peel and roughly chop the clementine. Whizz everything together with your almond milk and a cupful of ice.
