- 500g Broad beans
- 200g Mushrooms, sliced thinly
- 3 tbsp Olive oil
- 1/2 tbsp Wine vinegar
- 1 tsp French mustard
- A handful of Chives, chopped
- Parsley, to garnish
1. Cook the broad beans. Drain well and place in a bowl with the sliced mushrooms.
2. Prepare the dressing by mixing together the olive oil and wine vinegar. Season with the salt, pepper and sugar.
3. Stir the vinaigrette through and toss. Transfer to a serving dish and chill briefly. Serve sprinkled with the herbs.
