This two-month matured pork and thyme salami will have charcuterie aficionados licking their lips. It has a rather buttery character, and because it’s made from medium-cut mince, it’s not as firm as traditional saucisson-type salamis, melting in your mouth in the most wonderful way. The addition of fragrant thyme adds a lovely herbiness to what’s already a rich flavour. Ideal as part of a platter, or sliced thinly and popped into a panini with some cheese.
