Why?

Whip up a warming, autumn soup with our bundle of handy, organic ingredients. You’ll receive a rotating collection of four fresh fruits or veggies and one bunch of herbs, grown by our fantastic farmers, to turn into the heartiest of soups. There’s never been an easier way to eat seasonally and experience the natural, organic goodness that fills our fields in autumn.

We'll do our best to send you the items listed. Now and then (like when the weather’s gone wonky) we may have to send you a different organic fruit or veg. Our photos don’t show the actual contents or quantities.

To cook:

1. Drizzle some oil into a pan. When hot, add diced onion and gently fry until it becomes translucent.
2. Pour in enough stock to cover your veg and simmer for 10-15 minutes, until the veg is tender.
3. For a chunkier soup, remove half the mixture and blend. For a smoother soup, blitz all the mixture until creamy.

We've all seen it pickled in a jar in the supermarket but fresh beetroot is making a comeback and it's about time too! It's even got it's own website! Our beetroot is uncooked and needs to be prepared but it really is worth the effort as it's taste is unrivalled. Just add it to a stew, curry, or risotto and you'll see just what we mean. Celery’s crunchy stalks make for a great healthy snack because they are low in calories and have a high water content. There are so many ways to use celery also, great for smoothies, stir-fries, stock… we could go on with this versatile veg. Fun fact, it’s part of the carrot and parsley family.

Onions are one of the oldest vegetables known to humankind and we can trace our cultivation of them back at least as far as 5000 BCE. Our organic onions are so strong in flavour that you may want to keep a box of tissues to hand because you'll end up weeping buckets when it comes to chopping time!

Potatoes
Although it was originally feared to be poisonous, the humble potato is now a staple part of British cuisine. Whether it's fish & chips, roasties, mash, jackets, or you just want to boil 'em, they really are as versatile as it comes. We have many different varieties throughout the year, including Milva, Nicola, Rudolph and Estima
Watercress
Steve Collis grows our watercress on his farms in Dorset. Watercress has been growing on the farms since the 1850s, and it's still all planted by hand (not all Steve's hand - he has a few helpers, too). Some of these friends are furry. They work with bat conservation charities so that both the bats and your watercress are happy. Watercress beds are a rich and diverse source of insects, this natural challenge that can affect quality instead feeds hundreds of bats. They also have farms in Jerez, Spain where our watercress comes from during the winter months.
