High Weald Dairy is a family-run business based at Tremains Farm in West Sussex in the beautiful Ashdown Forest, owned by Mark and Sarah Hardy. They make organic sheep and cows' milk cheeses, and have won various awards over the last few years.
A really fresh-tasting, smooth ewe's milk cheese with pleasing garlic and herb flavours - it differs from other similar soft cheeses of this type in that it is not at all 'claggy' in texture and is light and easy on the palate. It is fabulous spread onto crackers or crusty bread, spooned onto a baked potato or even added to pasta dishes.
