Loch Duart, in northern Scotland, grow their salmon in as sustainably and as environmentally conscientious a way as possible.
These steaks can be cooked pretty much like a meaty steak. Brush with oil. Season and cook in a hot frying pan with a little knob of butter. In the summer, cook on the barbecue. Finish with a pat of flavoured butter or go Asian with a splash of soy or a spiced up vinaigrette.
This sustainably caught salmon comes from Loch Duart in northern Scotland. The first ever recipient of the Freedom Food standard for salmon, Loch Duart work hard to ensure the environment is as close as possible to what salmon experience in the wild, allowing plenty of space for the fish to swim in. The water is naturally kept clean by the tide, and by using holistic methods to help the salmon flourish. For example, they use native sea urchins to help keep the sides of the pens clean.
They take great pride in their efforts to preserve the fishing environment for future generations, as well as in the welfare and taste of their fish. By ensuring the fish have plenty of space, they’re able to exercise and grow naturally, which helps give the fish their excellent flavour.
