It may come as a surprise, but this wonderful herb has nothing to do with Roses or a girl called Mary. It actually translates from Latin as "Dew of the Sea", which we think is rather beautiful. An essential part of any herb collection.

When England becomes a bit wet, dreary and herb-unfriendly, our friend Olivier sends us fragrant bundles from a gorgeous patch of green broken up by clear, running streams near Perpignan, which is the principle herb growing region of France.
This deliciously fragrant herb is perfect to use when roasting lamb or vegetables. The flavours of tomato, spinach, peas, mushrooms, squash, aubergines, cheese, eggs, lentils, and focaccia bread will also be greatly enhanced by the addition of a little chopped rosemary. Keep wrapped up in a plastic bag, in your fridge. This will retain moisture and keep it fresh for you.
