  • Chicken drumsticks

  • Sea salt
  • Black pepper
  • Hoisin sauce

1. Get your drumstick. Get a sharp knife. About an inch from the non-meaty end, cut all the way round through to the bone.
2. Grab either side of the cut and pull, to bunch the meat up and expose the bone.
3. Use the heel of the knife to carefully cut the non-meaty end of the bone off.
4. Season, drizzle over a little olive oil and roast at 180°C for 30 mins. Or, marinade to your liking before cooking, in the oven or on the barbecue.
