Summer Pesto

Try making this simple yet delicious sauce, made with our fresh organic basil, and hey presto. Pesto!

Ingredients

  • 50g pine nuts
  • 1 garlic clove, peeled
  • 30g fresh basil
  • 10g fresh mint
  • A pinch of sea salt
  • 6 tbsp olive oil
  • 1 lemon

Method

1. Get a grown up to set a frying pan over a high heat. Add your pine nuts. Lower heat. Toast till golden - keep watch, they burn quickly.
2. Add the pine nuts to a food processor. Cut a slice from your garlic clove. Add it.
3. Pull the basil and mint leaves from their stalks. Add the leaves to the food processor.
4. Add a pinch of salt and olive oil. Grate in the zest of the lemon. Add a squeeze of juice. Blend till smooth. taste. Add a little more oil, salt, lemon or garlic, if you like.
