This herb combo works on carrots (orange and purple) as well as a jolly folk tunes.

Ingredients

  • A bundle of purple or orange carrots, halved or quartered lengthwise
  • A glug of olive oil
  • A small handful of flat-leaf parsley
  • 2 sage leaves
  • A sprig of rosemary, leaves only
  • A pinch of thyme leaves
  • A little nugget of butter (optional)

To make a meal of it, add a poached egg and a bit of finely chopped red chilli.

Method

1. Heat your oven to 200°C/Gas 6.
2. Add a glug of olive oil to a large roasting tin and warm in the oven.
3. Once hot, add the carrots. Season. Mix through the oil. Roast till tender, 20-30 mins.
4. Now gloss with a bit of butter or oil. Add more salt or pepper, if needed. Mix in the herbs. Serve.
