Quick Pickled Matchstick Beets

Cooking time


  • 3 beetroot
  • 200ml Cyder vinegar
  • 1 tbsp caster sugar
  • 1 cinnamon stick
  • A few peppercorns
  • 2 tsp caraway or cumin seeds

1. Peel 3 beets and slice into matchsticks.
2. Pour 200 ml Aspall Cyder Vinegar into a pan. Add 1 tbsp caster sugar, a cinnamon stick, a few peppercorns and 2 tsp caraway or cumin seeds. Simmer for 5 mins.
3. Pour the liquid through a sieve over the beetroot. Great in salads or with a ploughman's.
