Perfectly Peachy Salsa

This peach salsa will pair up beautifully with lamb steaks, roast chicken or a hot dog. Its sweet flavour also makes it a great table sauce for spicy food, so make up a batch to go with a hot curry and keep your cool.


  • 2 ripe peaches
  • 1 spring onion
  • 10g mint, leaves only
  • 1 lemon
  • A pinch of chilli flakes

1. Pop the peaches in a heatproof bowl. Pour enough boiling water over the peaches to cover them. Leave for 10-15 mins to soak and loosen the skins.
2. While the peaches soak, rinse and trim the spring onion. Finely slice it. Pick the leaves off the mint sprigs and finely chop them. Grate or pare the zest off the lemon. Juice it.
3. Drain the peaches. Pull the skins off. Slice them in half. Pull out the stones. Finely chop the peach flesh.
4. Pop the chopped peaches, spring onions, lemon zest, half the lemon juice and most of the mint in a bowl. Add a pinch or two of chilli flakes and some salt and pepper. Stir to mix. You can serve this salsa straight away or chill it in the fridge for a few hours.
