Peach Yoghurt Pops
Peaches Poached In Vanilla Syrup

Healthy, cooling and delicious, it’s the perfect summer snack! You can use any kind of fruit, juice or flavoured yoghurt. Makes about 4 pops.
- 200 g plain yoghurt
- 1 peach, chopped
- 1 teaspoon vanilla essence
- a pinch of cinnamon
- 240 ml apple juice
Blend all of the ingredients together and pour into small paper cups, or popsicle holders. Place in the freezer, and check on them after a couple of hours. When they are half frozen, place a spoon or popsicle stick in each cup. When the pops are completely frozen, turn the cups upside down and run them under warm water for a few seconds, until the pop slides out. Now enjoy your treat and chill out!

Also works well with pears and other fruits. Serves 4 to 6.
- 320 g sugar
- Peel from one lemon, roughly chopped
- 1/2 vanilla bean
- 4 to 6 firm peaches, halved, pits removed
Bring 1 litre of water to a boil with the sugar, lemon peel and vanilla bean. Stir to dissolve the sugar, and lower the heat to a simmer. Add the peach halves to the liquid and simmer until very tender, between 10 and 20 minutes. Remove them to a bowl. If thin, reduce the syrup over medium heat for 5 or so minutes until it reaches desired thickness. Scrape the seeds of the vanilla bean in to the syrup and pour the syrup over the peaches, along with the vanilla bean. Cover and refrigerate until needed, or serve warm with ice cream.
