Storage:
Oregano can be stored in a plastic bag in the refrigerator for up to three days. For longer storage, place the whole stems with leaves in a glass of water with a plastic bag loosely placed over the glass, and store in the refrigerator for up to one week.
Freezing:
To freeze oregano, wash and dry the sprigs, then strip the whole leaves off the stems and place in a plastic, airtight bag in the freezer. Alternatively, add the leaves to ice cube trays, fill with water, and freeze, using within one year.
Drying:
To dry, tie the sprigs into a bunch and hang in a cool, dark place until dried.
How to cook it:
To release its flavour, crush Oregano by hand or with a mortar and pestle before using it in your recipes.
How to use it:
Oregano goes well with tomato dishes as well as chilli, eggplant, lamb, pork, beef, garlic, onion, thyme, basil, parsley and olive oil; egg dishes like quiches and omelettes; and cheese based foods like pizza and pasta bakes. Vegetables sautéed in olive oil, garlic and oregano make a quick and tasty side dish. Oregano is excellent in soups and cream sauces.
