- A thumb of ginger
- 1-2 apples, thinly sliced
- 1½ ltr dry cider or apple juice
- 4 tbsp demerara sugar
- 2 cinnamon sticks
- 12 whole cloves
- 2 bay leaves

Method
1. Chop the ginger into 3 slices, about 1cm-thick each. Thinly slice the apple(s). Pop the ginger and apple slices in a large pan. Pour in half the cider or apple juice.
2. Add the sugar, cinnamon, cloves and bay leaves. Pop a lid on the pan and set on a medium heat. Bring up to a bubble, then reduce the heat and gently simmer for 20-30 mins.
3. Top up the pan with the remaining cider or apple juice. Simmer for a few more mins to warm through.
4. Taste the mulled cider/apple juice and add more sugar, as needed. If you've added more sugar, simmer for a few more mins to dissolve it. Ladle into mugs or heatproof glasses and serve.
