Method

1. Give it a squeeze. If there is a bit of give it's ripe.
2. Stand the mango on its end. Slice down the wide sides, about half an inch from the middle.
3. Cut round the stone on the other two sides.
4. Being careful not to cut through the skin, score one way then the other.
5. Invert by pushing in the middle of the skin side, and marvel at the hedgehog impersonating fruit.
6. Use in salads, smoothies or get stuck in straight away.
