Gingery Nectarine Relish

Transform a simple steak or roast aubergine into something special with this delicious nectarine relish.


  • 1 garlic clove
  • 25g ginger
  • 1 chilli
  • 1 lime
  • 10g coriander, leaves only
  • 3 ripe nectarines
  • 1 tbsp caster sugar

1. Peel and grate the garlic and ginger. Halve the chilli. Flick out the seeds. Chop it. Finely grate or pare the lime zest. Juice it. Finely chop the coriander leaves.
2. Mix the lime zest, juice, garlic, ginger, chilli and the chopped coriander leaves together in a bowl.
3. Halve the nectarines. Pop out the stones. Chop the nectarines and stir into the relish with the sugar. Taste. Season with a little salt if you think it needs it. You can serve this relish straight away or keep it in the fridge for a few hours.
