This cheesy, crumbly galette is as easy as, well, pie. With a herby, peppery salad, it’s the perfect meal for a long, bright evening.

Ingredients

  • 150g plain flour
  • 45g butter
  • 100g cheddar
  • 1 egg
  • 2 onions
  • 1 garlic clove
  • 1 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 3 courgettes
  • Sea salt and freshly ground pepper
  • 25g pine nuts
  • 2 tomatoes
  • A handful of thyme
  • 50g rocket

Method

1. Heat your oven to 200°C/Fan190°C/Gas 9. Tip the flour into a mixing bowl. Finely grate the cheddar. Add half to the bowl and save the rest for later. Chop in the cold butter. Use your fingers to rub the ingredients together till they resemble coarse breadcrumbs.
2. Carefully crack the egg and separate the yolk from the white. Stir the yolk into the flour mixture with 3 tbsp of cold water till you have a soft dough. Wrap in cling film and pop in the fridge for 15 mins to rest. Keep the egg white for later.
3. While the dough rests, peel and thinly slice the onions and garlic. Pour ½ tbsp oil into a frying pan and set on a medium-low temperature. Add the veg. Cook and stir for 5 mins till soft. Stir in 1 tsp of the vinegar and a little salt and pepper. Take off the heat.
4. Lay the rested pastry on a sheet of greaseproof paper. Roll into a rough circle, a little larger than a dinner plate. Slide onto a flat baking tray.
5. Scatter the onions on top of the pastry, leaving a gap of about 3cm at the edge. Add the remaining grated cheddar. Thinly slice the courgette and arrange on top. Season well with salt and pepper. Fold in the edges of the pastry to create freestanding sides, and brush with the egg white.
6. Bake in the oven for 20 mins. Scatter the pine nuts over the top and bake for 5 more mins till the pastry is golden brown.
7. While the galette bakes, make a dressing in a bowl by combing ½ tbsp olive oil with the remaining vinegar, a pinch of salt and pepper and the thyme leaves. Slice the tomatoes and tumble with the rocket in a bowl. Spoon the dressing over the top. Toss to mix.
8. Serve thick slices of the warm galette with a pile of the dressed salad.

I had this recipe in the veggie box recently and found that 3 (medium sized) courgettes were way to much. I think I used the equivalent of 2 and struggled to get them all stacked onto the pastry. The cooking time could have been a bit longer or some pre-cooking of the courgettes would have helped. I also think Feta instead of Cheddar (but not within the pastry) would have made this more of an interesting taste.
