A little intro
Turn an unloved or over-abundant veg into chips and suddenly they rouse a raft of enthusiasm. We love this version of veg chips!
Step by step
1.
Mix the flour and spice in a shallow dish. Grate in some lemon zest. Mix through.
2.
Lightly coat the courgette batons in the flour mix.
3.
In a large, hot pan, shallow fry the flour-dusted batons in a 1cm deep puddle of olive oil until golden.
4.
Season. Squeeze a little lemon juice over. Tuck in. Delicious as a snack or a side.
