Storage:
Chives can be stored in a plastic bag in the refrigerator for up to one week. Do not wash until ready to use them, as moisture will promote decay.
Freezing:
Chives can be frozen, by chopping into an ice cube tray. Fill with water and freeze. Before cooking, place the ice cubes in a strainer over the sink to melt.
How to cook them:
Chives have a mild, onion-like flavour, with a hint of garlic. The delicate flavour is most pronounced when used raw, and the green colour is also retained. Garnish any dish, soup, sauce, or spreads with snipped chives before serving. If adding to cooked food, wait until the very end of cooking.
How to use them:
Chives are excellent stirred into mashed potatoes, in omelettes, tomato or cream sauces, and with any vegetable, meat or fish preparation.
