Barbe-coffee Sauce

Barbe-coffee Sauce

This zingy barbecue sauce comes with a rich coffee kick. Sounds weird, tastes brilliant, makes enough to fill 3 jam jars if you can bear to share the barbe-coffee bounty.

Ingredients

  • 1 mug of good quality ketchup (ours works a treat)
  • ½ mug of strong coffee
  • ½ mug of honey or black treacle
  • 2 tbsp soy sauce
  • 2 tbsp Worcester sauce
  • 2 tbsp Dijon or wholegrain mustard
  • 1 tbsp olive oil
  • 1 tsp finely chopped rosemary leaves
  • ½ tsp paprika
  • 1 garlic clove
  • Sea salt
  • Freshly ground pepper

Method

1. Pop all the ingredients – apart from the garlic, salt and pepper – into a saucepan.
2. Crush the garlic with a good pinch of salt and stir that in.
3. Set the mixture over medium heat. Let it bubble up to thicken.
4. Taste and add some black pepper or a little more salt if you like.
5. Pour into clean jars, seal and store.
6. Keep It CoolThis sauce freezes well, and will keep in the fridge for up to a week.
