Asian Mushroom Burgers

  • 3 tbsp tamari
  • 1 tbsp agave
  • 1 tbsp ginger, peeled and grated
  • ½ chopped chilli
  • 1 garlic clove, peeled and grated
  • 4 portobello mushrooms
  • 4 shallots, peeled and sliced
  • 1 tbsp olive oil
  • A pinch of sea salt
  • 4 sesame rolls

1. Fire up your barbecue or heat your oven to 200°C/Fan 180°C/Gas 6.
2. Mix 3 tbsp Sanchi Tamari Soy Sauce with 1 tbsp agave in a bowl. Add 1 tbsp peeled and grated ginger, ½ chopped chilli and 1 peeled and grated garlic clove. Whisk together. Add 4 portobello mushrooms and toss to coat. Set aside for up to 1 hr.
3. Cook the mushrooms on the barbecue for 10 mins, flipping over after 5 mins. If cooking in the oven, roast for 10 mins. Baste with the marinade.
4. Fry 4 peeled and sliced shallots in 1 tbsp oil with a pinch of salt over a medium-high heat for 5 mins till golden. Serve the mushrooms in buns with crispy shallots.
