These organic parsnips are grown by Dan Geity on Home Farm, in Ormskirk. Farming from a gorgeous part of the country, Dan's a laid back, salt of the earth chap who grows fantastic onions, spring onions and other veg for us throughout the year. When we need a few more parsnips we go a little further afield. Arenosa is looked after by Jan van Geffen and his son Sam. They were some of the first farmers who settled in the Flevopolder, a reclaimed and very fertile part of Holland. They grow carrots, leeks and spuds yet specialise in lesser known veg (by Dutch standards) like parsnips, black salsify, parsley root and Jerusalem artichoke. In Holland they’re sometimes called ‘forgotten vegetables’ – and they’ve become quite popular.
A perfect addition to any roast dinner. You do not need to keep your parsnips in your fridge; they are a relatively tough root vegetable. Keep them in a cool dark cupboard, unwrapped, or in a paper bag. Suitable for home freezing.
