Peter and Sue Coleman and their son James, our poultry butchers, have worked Merrifield farm, in the beautiful Devonshire countryside just outside of Crediton, for over 20 years. Their surname isn’t chickens, but it may as well be – they live, breathe, everything chickens. The Colemans work with our two chicken farmers Freddie and Chris. Freddie started farming three years ago, when he was just 20. Freddie's dad, Fred, lent him some land and we promised to buy his chickens. The organic grass and clover pasture on his Devonshire farm is full of natural nutrients, and because he moves the sheds around regularly, the chickens step out onto fresh, lush greenery. Freddie's plucky cluckers are healthy and resilient because they’re very active, they live longer and eat a 100% organic diet; including lots of grass, which makes the meat higher in omegas. Their quality of life is a world away from not just intensively reared birds, but some other organic flocks too. This reflects in the flavour and quality of the meat.
Chicken (100%)
Chicken, as with all meat, is a good source of protein. However the chicken liver itself, provides us with more specific health benefits, high in iron, folic acid and zinc. Chicken can help prevent and treat anaemia, due to its concentrated source of nutrients. Chicken liver will be especially useful for you if you are recovering from surgery. Being rich in zinc, chicken can benefit growth (especially young children), and our immune system. People who eat little, or the elderly, ill or anorexic will find eating chicken extremely beneficial to them due to the high level of zinc.
To roast your chicken, allow 25 minutes per 500g plus 25 minutes in a preheated oven at 190C/374F/gas 5. Cook thoroughly until the juices run clear when pierced with a skewer and there is no pink meat. Chicken should be kept at a very cool temperature, wrapped and kept away from other foods, in the bottom of the fridge. Chicken can be frozen, but should be thoroughly defrosted before cooking. Cooked chicken should not be reheated once it has cooled -any leftovers should be cooled to room temperature, refrigerated within 2 hours and eaten within two days.Higher Fingle Farm vac-pack all their chicken pieces as this keeps the packaging to a minimum. Upon opening, vac-packed chicken can sometimes have a strong smell, but don't worry, remove the plastic and let the meat rest for 10 or 15 minutes and the odour will disappear!
