Tomato and basil: it sounds so simple. You may be thinking that you could easily whip this one up at home. Well, perhaps you can. But, there’s something quite magical going on in this sauce. Maybe it’s the micro-climate of the corner of Devon where it’s made. Or, possibly, it’s that nice knob of organic butter they add at the end. Either way, this sauce is one not to be missed.

Diana Cooper, owner of Tideford Foods in Devon, is shy about her culinary background. "I did a Cordon Bleu course," she says, laughing, "but that sounds really Seventies." She ran an organic café in Totnes in Devon in the Eighties, and in the Nineties, moved back to the family home near Totnes. One year, the family found themselves with a greenhouse full of basil, so they used it to make pesto, which they sold through local businesses. It was a huge success, and led to the production of some Christmas hampers, using turkeys from the family farm. "That's how it started," says Diana. Tideford Foods now makes a range of speciality organic foods, which are complete additve-free. Diana refers to them as "a dinner party in a jar". From the creamiest rice pudding to award-winning pasta sauces, these are dishes you certainly would feel comfortable serving to guests.

Stir into hot pasta or vegetables. Stir in a saucepan until hot, or to microwave, remove lid, place lightly on top and heat for 2 to 3 minutes or until piping hot. Handle with care. Please keep chilled. Once opened use within 3 days. Not suitable for home freezing.
