We get this cheese from Richard and Caroline Harbord at Tree Tops Farm - 80 acres of organic land set in a small quiet valley overlooking the River Brue in Somerset, near the medieval town of Bruton. They have a herd of 40 pedigree Jersey cows, who live their lives out in quiet contentment in lush grassy fields. Richard and Caroline have given them all names, such as Ivy, Louise, Priscilla, Jasmine - not forgetting Daisy!
This is a very creamy Brie-style cheese that has been delicately smoked; it is very pleasant and mellow, but its smoky flavour really sets it apart from everything else on the cheeseboard. Will probably get finished off rather quickly, so best order a pair...

Perfect when served with Popina's olive, tomato & sesame crackers! To bring soft cheeses to ripeness, tightly wrap and store them at a cool room temperature for a day or so. Once ripened, tightly re-wrap and store in the coldest part of the refrigerator. This cheese can be frozen so long as it is thawed out slowly in the fridge for 24 hours.
