Simon Weaver's Cotswold brie is an excellent cheese with the fantastic flavour one would expect. It is beautifully glossy and straw-coloured, with an edible white rind.
Perfect paired with Pimhill oatcakes, and a cheeky glass of red.
Simon Weaver's Cotswold Organic Dairy is relatively new to cheesemaking, but his cheeses are already getting lots of attention - in the space of just one year, he has scooped two Taste of the West awards and a Gold medal at the 2006 World Cheese Awards! All his cheese is made from milk from his herd of Fresians, who graze the Cotswold meadows of the River Dikler.

The cheese should be refrigerated until it is to be used. The brie should always be tightly wrapped. As soon as mould appears on the cheese it should be disposed of. The cheese should be returned to room temperture for between thirty minutes to an hour before being consumed.
