Poor neglected wings! Ok. They're a bit fiddly but they have a surprising amount of meat and it's probably some of the tastiest meat on the bird. Seriously, the wings are where it’s at, and they’re ridiculously easy to prepare. Plus this pack contains four chicken drumsticks, a long standing favourite, as well as the four chicken wings.
One of our favourite ways is to just bang them in a roasting tray with some herbs and quartered oranges or lemons. From there you can add a bit of earthy Moroccany spice (think cumin). Do a Jamie Oliver by whacking a bit of chilli in there. Or, go pub-style by saucing them up with some BBQ.
Wings also make a mighty good stock, and if set yourself in front of the tele with a pot of cooked up wings, you could pluck out the meat and you'll be flying with a hearty chicken soup. Wings: food for the soul. They're much more interesting than breasts!
We’ve been looking for a free range chicken that meets our high standards as holders of the 2010 RSPCA Good Business Award for animal welfare. Peter and Sue run a chicken cooperative in Devon, made up of a few free-range farms, and they really impressed us with their expertise and the passion they have for their birds. The birds are kept in the warm for the first 28 days as they are too fragile to cope with the British outdoors at this stage. Once they move to the arcs, they have complete access to the outdoors during daylight hours – the whole side of the arc is open so they can come and go freely. They get a carefully balanced feed which is not only rainforest-friendly, but rich with British ingredients too. It is completely free of additives, antibiotics and growth promoters and it is varied weekly.
