Lye Cross Farm is owned by the Alvis family, who have fifty years of cheese making experience. It is based at the foot of the Mendip hills, in Somerset, and only a few miles from the village of Cheddar. All of their cheeses are made using traditional methods. Lye Cross Double Gloucester was the winner of the Best Double Gloucester award at this year's Royal Bath & West Show.
The classic Welsh cheese, pale in colour, it has a moist and crumbly texture and a delicate flavour with a deliciously tangy finish.
This beautiful cheese should always be kept tightly wrapped and refrigerated although it will benefit from a bit of moisture as it can dry out quite quickly. One useful tip is to always keep it in the vegetable or snack drawer and wrap it in a slightly damp paper towel to ensure the rind doesn't dry out. Not suitable for home freezing.
