Here’s what we’ve been up to:

Rachael
Roasted carrot, ginger and garlic soup, with chives on the top.

Sara
I made mashed celeriac with my own 15 min stock and roll vegetable stock the other night. Had it with a Dragonfly beany.

Then I made a vegetable laksa (coconutty soup with ginger and chilli and noodles) with some carrots and a pak choi. All in the spirit of vegan January.

Potato wedges, and I made a broccoli and cumin soup which had a dollop or two of Brown Cow natural yoghurt in it, it was delicious!

On Sunday my mum cooked up the parsnips, carrots and potatoes from our box to go with a lamb shoulder. It was delicious. She just roasted the parsnips with some herb seasoning and the potatoes with the skins on and lighlty salted. The carrots were steamed.

Warm lentil salad with roasted butternut squash (roasted with cumin and garlic) and red wine vinegar dressing… delish.

    Neck of lamb casseroled with rosemary, garlic, squash, carrots, leeks, onions and celeriac – just what you need to come home to on a cold February evening. Have cider to drink while it’s cooking!

    I made a Jamie Oliver 15 min meal of Ricotta Fritters (using the Organic Ricotta from Able&Cole), Tomato Sauce and a Courgette & Mint Salad. Delish!!

    Had the Brocconut Noodles Saturday night, made the cottage and roots pie with the braised red cabbage on the side, made celery risotto and had the celeriac and Stilton (substituted for feta) soda bread with veg box soup for lunch today! It’s my second week of boxes and the first times I have used celery, celeriac or red cabbage (was somewhat stuck in a food rut which A&C have pulled me out of!)… Will submit my bread for the competition over the weekend…

    quick and simple pumpkin soup: squash, chopped ginger & milk
    lunchbox: rice, leek and Chinese leaf parcels seasoned with garlic, chilli, ginger, lemon juice and soy sauce (A&C Veg Box Companion, adapted)

    I made white chocolate chip and pomegranate cookies, with the pomegranate from our veg box. Delicious!

    I got very excited when I got my celeriac and the accompanying recipe for blue cheese and celeriac bread. I wasn’t suire about it because it didn’t have any raising agent other than self raising flour and no salt. Experienced cook/baker that I am, I decided to take a chance and followed the recipe to the word. My conclusion? You must be joking! It was sloppy, gummy and horrible! I nearly threw it away, but managed to salvage it by adding butter, more crumbled blue cheese, salt, more flour and baking powder and rolling into little balls and baking at 200 degrees C. As a result, my dinner was an hour later than planned, not particularly nice ‘accompanying bread’ and the family was not happy. This is one very delicious SEEMING recipe that simply didn’t work!

    Roast diced butternut squash with sliced red onion and peppers in a splash of garlic oil. Chuck in some par boiled diced potato and some cooking chorizo sausages. Serve with feta cheese crumbled on the top. Its not often my husband is moved to comment but he has asked me to make this again!

    Swede cooked with butter, onion, sage, salt and pepper from Hugh’s Veg everyday book served with cumberland sausages, brocolli carrots cabbage and heaps of gravy all courtesy of the veg box!

    Pancakes twist .. My sons like lemon and sugar, but successfully “rang the changes” with a st clement’s version ( ding dong) adding blood orange juice to the lemon. Sorry about the bad jokes, what came over me ?

    My boys love macaroni cheese and it is a great dish to add veggies to. Today I will be using whole milk, vintage cheddar and broccoli, plus baby tomatoes and pine nuts scattered on top.

    Made the “Roots Manoeuvre Curry” last night, using up carrots, beetroot and celeriac. DE-LI-CIOUS! Didn’t have time to roast the veg, so just pan fried them on a really high heat until they browned, then cooked them with the lid on for a bit before adding them to the heavenly sauce. Thank you for such a fantastic recipe. Love you A&C!

    Love the style of A&C recipes – not too prescriptive!
    Just tried the Caesar Pasta recipe made with the lovely Oak Leaf Lettuce from last week’s veg box, but made with onions instead of leeks (I forgot to get any!) and it was lovely.
    Will be making the Roasted Carrot soup with cashews and chilli again tomorrow (with peanut butter instead of cashew nuts) as it’s better than any soup I’ve bought.

    I roasted hokkaido squash which wasnt as hard as i thought to prepare with a little olive oil and some crumbled goats cheese which was delicious. tommorrow i will cook beetroot and have it with the remaining goats cheese. yum :-)

    It’s been a soupy month:

    I used the celeriac to make celeriac, apple and stilton soup which was suprisingly yummy (not a fan celery flavours).

    Made a squash and cabbage stew which was later pureed and creamed into a great soup.

    Roasted carrots with a fresh chilli and cashew nuts to make another fabulous soup. Roll on the cold weather (or maybe not!)
