Rachel’s foodie tip

I had some chicory in my box last night, and it reminded me of a recipe that I originally wrote for summer leaves, but it’s brill with winter leaves like chicory and radicchio.

Summer (Also Now Winter) Leaves in a Blue Dress

Prep: 10 mins
Cook: 20 mins
Feeds 4

Ingredients

  • 1 head of lettuce
  • 4 tbsp blue cheese
  • 1 tbsp water
  • A drizzle of olive oil
  • 4 tbsp creme fraiche or natural yogurt
  • Freshly ground black pepper
  • Parsley or chives, finely chopped (optional)
  • 2-3 small raw beetroot, thinly slices (optional)

Mush the cheese, water and a good pinch of pepper in a bowl using the back of a spoon to form a paste. Add a little olive oil. Fold through.

Stir the yogurt or crème fraîche in. Taste. Adjust seasoning, if needed. Add more olive oil or yogurt/crème fraîche to get the right consistency.

Drizzle over your leaves, or use as a dip. Thinly sliced raw beetroot is especially nice treat to throw into the mix as well.

Healthy for some? Blocked arteries for others, I was in St Thomases overnight. My brother also had visual problems.
I had wondered if Rachel (her of National tv advertising) was also the sales person for low fat yogurts. Are there many low fat yougurts in the Abel & Cole locker?

Hello Geoff,

Are you asking after our Rachel? Rachel is our resident foodie here at Abel & Cole and hasn’t made any TV appearances (not yet anyway!). We have yoghurts by Yeo Valley and Brown Cow. Judith from Brown Cow has told us: ‘Our yogurts are only 5% fat, have no added sugar and are non-homogenised so are therefore a ‘healthy’ option’, and we also have a few fat free Yeo Valley yoghurts available. I hope that helps, but let us know if you have any further questions.
