Ingredients you'll need
  • ½ fennel bulb
  • 2 apples
  • 2 carrots
  • A thumb of ginger
  • 300ml almond milk

  • A cupful of ice
Step by step this way

    Finely chop half the fennel, discarding the dry tips. Quarter the apple, slice out the cores and coarsely grate the apple. Coarsely grate the carrot to match. Roughly chop the ginger (no need to peel). Pop everything into your blender with the almond milk and a cupful of ice. Blend till smooth.

    In Fine Fennel
    Your remaining fennel half will keep in the fridge for a couple of days wrapped up. Finely chop and add to the base of tomato sauces, finely shave into salads or roast till caramelised and tender.
